Eva´s child-friendly Halloween recipe, with an “empty plate” guarantee!

Scary, sweet peppers – the perfect Halloween-meal!

Hello! Everybody.
I found another Norwegian called Eva living in France, really close to the Matisse house in Vence and she will be guest posting here today.
Eva has a great blog (in Norwegian) She is posting beautiful photos and mouth-watering recipes based on the ingredients available in her organic garden and the local farmer’s markets. They looked so lovely we just had to try some, so we asked her to make a buffet “welcome meal” for our students in September. It was perfectly delicious. Thank you Eva.
And last week I saw that she had posted this recipe, and I thought it was so cool, I asked her if I could share it with you.  I know you will love it like I do.
EVA in PROVENCE
Everybody just looooves these scary, sweet Halloween-peppers! Especially the kids. And in addition to the “cool looks”, this plate is packed with all the things children like; ground beef, tomatoes, macaroni, sweet corn, and cheese!
P.S. Make sure you cut the vegetables in small pieces because children are more likely to eat everything if there are no big pieces of vegetables! This child-friendly dinner comes with an “empty plate” guarantee!

Ingredients:

(6 persons)
6 orange (or yellow) peppers
500 g lean ground beef
1 onion, minced
2 garlic cloves, crushed
1 squash, minced
2 dl macaroni (small)
1 can crushed tomatoes
1 small can sweetcorn
100 g grated cheese for the filling and the topping
1 teaspoon dried thyme
1 teaspoon paprika
Salt and pepper to taste

 

Instructions:

Preheat the oven to 200 C.
Cut off the top of the peppers (don’t throw them away), rinse and remove the seeds.
Cut out eyes, nose, and mouth with a small, sharp knife.
Add 1 dl of water in an ovenproof pan, and put the peppers inside.
Bake the peppers in the oven for 20 min, in the meanwhile you start making the filling.
Cook the macaroni al dente.
Cook the onion soft in oil, 5 min.
Add garlic, let it cook for 1 min.
Add squash and spices, and let it cook for 10 min.
Put the vegetables on the side of the pan, and add the ground meat.
Cook until the meat is well browned.
Finally, you mix in the cooked macaroni, tomatoes, sweetcorn and most of the cheese. Let it cook for 5 minutes.
Fill the peppers with the filling, top with grated cheese, and bake in the oven for 10 min.
Serve the scary, sweet peppers with the rest of the filling, and get ready for a perfect Halloween!
